White Bean Salad: A Simple, Healthy Salad Hack

This is how I get my kids to eat beans.

A great source of protein and fiber, this is one of those salads that quietly does a lot. It’s satisfying, keeps you full, and makes eating well feel a lot less like work.

It works as a side with just about anything, steak, chicken, fish, or whatever you’ve got going. And the leftovers? Perfect for a next-day lunch when you want something lighter than Chipotle. #iykyk

The formula is simple:
white beans + Mediterranean flavors like red onion, peppers, olives, and roasted heirloom tomatoes, all tossed in a sharp red wine vinaigrette.

Want a little heat? Fold in some pepperoncinis for balance, or a spoonful of Trader Joe’s crunchy chili onion for a deeper kick. You can’t lose.
