This cake is easy to make, something everyone enjoys, and as the title suggests… it’s fucking delicious.
What started as my mother-in-law’s hand-me-down recipe has become the cake in our family. The one that shows up for birthdays, celebrations, and my signature contribution when assigned dessert for dinner parties. It’s based on a classic “depression cake” a name rooted in history, not emotion… although it does have a way of improving your mood.
It’s also one of those recipes that just quietly works. No drama. No overthinking. You make it once, and it sticks.
Where it comes from
For me, personally - this comes from the kitchen of Marlene Horan in Port Jervis, NY. I first made it when my husband asked for cupcakes, the way his mom makes them, and I called her to figure out what that meant.
But, historically, this recipe comes from a time when ingredients like eggs and dairy weren’t always available during The Great Depression. So they were left out.
And somehow, that limitation turned into a strength.
From a chef’s perspective, this is the kind of recipe you hold onto. Fewer ingredients, fewer variables, and a process that’s almost hard to mess up. It’s forgiving in the best way.
